Try all the seasonal produce with this colorful and versatile salad!
- 2 fresh peaches, diced
- 15-20 grape tomatoes, quartered
- 4oz fresh mozzarella, diced
- 10 fresh basil leaves, chopped
- 1 Tbsp olive oil
- 1-2 Tbsp balsamic glaze/vinegar
- Salt, to taste
- Pepper, to taste
- In a medium size bowl, add all ingredients and stir to combine.
Enjoy as a salad, on toast, over greens or grains, with your protein of choice or as a pizza topping!
